Andy McLeish was interviewed by Great British Chefs and was asked to create a variety of recipes using Irish Beef. One of the dishes Andy created uses a fillet of beef to create an impressive beef Wellington, resulting in “a beautiful eye of beef, nice and pink”. You can view the recipes and video here.
