Five specially selected sparkling wines chosen by Sophie Robertson of Nyetimber, accompanied by Canapes from the kitchen of Chapter One. Their vineyards share similar characteristics with the best sparkling wine vineyards in the world. Greensand and chalk soils allow the vines, in each of their separate sites, to flourish across the south of England. The climate here allows for the slow ripening of the grapes, allowing them to achieve the optimum levels of ripeness and acidity, as well as the complexity and finesse for which their exquisite wines are renowned. They craft all the wines at Nyetimber according to the traditional method, ageing them for extended periods of time to build complexity and flavour, and allowing for generous post-disgorgement time before release.
