Following a brief closure in early 2019, Chef Patron Andrew McLeish and business partner Marcel Faulstich are proud to unveil a spectacular, major refurbishment. This transformation introduces a thoroughly modern approach to our beloved dining space, offering guests greater culinary variety, elevated service, and a truly unforgettable atmosphere.
Building on the site’s rich history as a premier destination to dine and entertain since the 1930s, the confident new interior by Sherliker Design—whose esteemed portfolio includes the French Laundry and the Corinthia Hotel—is inspired by the sophisticated elegance of a bygone era. Beautiful Art Deco influences feature throughout, from the monochrome sunburst flooring and bespoke reclaimed wood reception desk to an eye-catching Portuguese pink marble bar. Additionally, our relaxed all-weather terrace now boasts comfortable banquette seating, a retractable roof, and outdoor heating, providing the perfect setting for year-round alfresco dining.
Seasonally-Inspired Modern European Dining
In the kitchen, Chef Patron Andrew McLeish and his expert team continue to champion exceptional culinary quality with a regularly changing, seasonal menu. Guests can savour exquisite dishes—such as gin-cured trout, Josper-grilled premium cuts, and classic tarte Tatin—prepared using the finest ingredients from trusted Kentish suppliers. Our refined main dining room remains the ideal setting for special occasions and corporate entertaining, offering an exquisite à la carte selection, our Menu du Jour, and superb tasting menus. To complement the vibrant atmosphere of our newly designed Brasserie, we have also introduced a selection of elevated informal favourites, perfectly paired with bespoke signature cocktails crafted by our in-house mixologists.
This relaunch marks the most significant development since Andrew and Marcel took full ownership of Chapter One in August 2017. Having been integral to the establishment’s story for nearly two decades, Andrew is thrilled to breathe new life into the space. ‘This transformation is an opportunity to truly showcase our versatility,’ he explains. ‘Whether it’s entertaining clients, hosting celebrations in the private dining room, enjoying a leisurely lunch in the brasserie, or sipping cocktails on the terrace, our aim is to create an exceptional and memorable experience rooted in quality, choice, and seamless hospitality.
